Banana Walnut Cake

As a kid, I didn’t like Banana or Nuts much. Every time they were given to me, I’d run away. Literally!

But ever since I started living in Kuwait and having a kitchen of my own, the sight of extra ripe banana got me worried and that’s when I started experimenting with them. From incorporating them into pancakes and milkshakes to making typical Mangalore style buns and cakes, I tried everything I could. IMG_8545

And it wasn’t until I tasted a slice of banana cake loaded with walnuts that I was truly converted. Now the combination is the epitome of comfort food in my mind and is something I crave often.

This recipe can be made with a hint of cinnamon if you wish and served with any frosting you like. Some options are a yummy caramel sauce, cream cheese frosting or Nutella. Even a little vanilla ice cream would taste yum with some chocolate sauce on top. Nuts can be replaced with blueberries or choco chips that are first tossed in some flour and then added to the batter.

Now the recipe I’m posting today is made with the minimum ingredients I had at home, but I generally add a lot of nuts to it.

INGREDIENTS:

3 Ripe Bananas mashed (Cavendish)

150 gms Unsalted Butter (room temperature)

1 cup Brown Sugar

3 eggs

1.5 cups All-purpose Flour

1.5 tsp Baking Powder

A dash of vanilla extract

A hint of cinnamon (optional)

Chopped walnuts

METHOD:

Preheat oven at 180-degree celsius for 10 minutes. Prep a baking tray and keep aside.

Combine butter and sugar. Add eggs and vanilla extract. Next, add the dry ingredients and combine using the cut and fold method. Finally, add mashed banana and nuts (If using blueberries or choco chips, toss them in some flour first) combine and pour into the prepped tray.

Bake for about 25-35 minutes, or until a toothpick inserted into the center comes out clean. Serve warm or at room temperature with any frosting you like!

Its a super simple recipe that you can make with so many add ons or gobble it up just the way it is.. Below is a picture of what I had made long back with caramel sauce and choco chips. I really hope you enjoy this 🙂
