The first time I baked cookies was when I was in Kuwait. Had some amazing cherries in hand and I wanted to make something out of it. And, the only thing that popped into my head at that time was Cookies. Used a recipe I found online, and let me tell you, it was such a hit. Expected me to be the Cookie Monster but turns out there was a handsome, super good looking-not so blue one at home-my Darling Husband. Frankly speaking, I expected him not to even taste them, but then the next thing I knew was mister was packing these delicious cookies to take to work. Even made me bake some more after a few days. Amelia enjoyed the cookies just as much as her Abbu did 😅
INGREDIENTS:
Butter – 125g / 1 cup
Brown sugar- 3/4th cup
Castor sugar-1/4 cup
Oats- 3/4 cup
Flour- 1.5 cup
Baking Soda-1 Tsp
Boiling Water-2 tbsp
Dark chocolate-200g
Pitted Cherries- 1/2 cup or as needed
Secret Ingredient- LOVE
NOTE:
*Refrigerating the cookie dough is important as it solidifies the fats in the dough and minimizes the spreading during baking.
*Remove cookies from oven when they are slightly undercooked and let them cool on the baking tray.
*If cherries aren’t available where you live, skip it.
METHOD:
In a bowl, mix together butter and both the sugars till well combined. Fold in flour.
Add boiling water to the baking soda and pour into the dough.
Add oats, chocolates, and cherries and combine. Rest the dough for a minimum of 30 minutes.
Make small balls and Flatten with your fingertips.
Preheat oven at 165 for 10 minutes and then bake for 10-12 minutes.
