I’ve been singing this song from the time I opened my eyes this morning and the little Minion I live with has been singing along too (Now you know what song I’m talking about).
Amelia is my little Minion as she truly, genuinely, affectionately cherishes Bananas. Or on the other hand, would it be advisable for me to call her a little monkey? Whichever way shes excessively adorable.
There’s something about the Kuwaiti Bananas that she absolutely loves and can eat them every single day. I repeat- EVERY. SINGLE. DAY. Annnndddd in any form; just plain bananas, bananas with milk, oats and even Pancakes.
Came across this recipe last time I was in Kuwait and these have been a favorite in my home ever since. These pancakes taste so good and a dollop of Nutella on top just makes them heavenly. They can be topped with maple syrup, honey or chocolate chips.
You can even add some chocolate chips in the batter if you like.
INGREDIENTS:
1 large Banana
1/2 cup All purpose flour/ Wheat Flour
1/2 cup milk of choice
1 tbsp Butter
1-2 tbsp Sugar/Honey
Pinch of salt
1 tsp Baking Soda
2 tsp Baking powder
Nutella and Fruits for serving
Note:
*Measure ingredients properly.
*Good Bananas are key to tasty pancakes.
*You can mash bananas till smooth or keep them a little chunky. To make things easier, put it all into a blender.
*Make sure the batter isn’t runny or too thick. If the batter is too runny, add flour; if too thick, add milk.
METHOD:
Melt Butter in a bowl and mash Bananas with the melted butter. Add milk to the banana mixture.
Fold in Flour. Add sugar/honey, salt, Baking powder and soda to the batter. Whisk to combine all ingredients.
In a nonstick pan, heat a little butter and pour 1/3 cup of the batter. Flip when one side is cooked and repeat to make more pancakes.
Serve with more bananas, Nutella or any other topping of your choice.
