Everyone loves their Gobi (Cauliflower); mostly in the form of a Manchurian. I like it like that too. What I also like is this. This particular Cauliflower Bhaji recipe has been an absolute family favorite rightly from childhood. My maternal aunt came up with this recipe and I can’t thank her enough. It is nutritious and delicious at the same time. Also, has all the goodness from eggs. The days where we don’t want to have any meat on our plates, this is what we make. We either eat it as a side with some rice and dal or just eat it with rotis.
Even though my darling husband isn’t a big fan of cauliflowers, he eats this particular dish without any cribbing. This is a great toddler-friendly recipe too.

INGREDIENTS:
1 small Cauliflower cut into florets
1 big Onion sliced
1 big Tomato sliced
2-3 Green chilies chopped
1/4 tsp Turmeric Powder
1 egg
Salt to taste
NOTE:
*Add enough water to cook the cauliflower.
*The spicier, the better. But if it’s for your toddler, be careful with the chilies.
METHOD:
Heat some oil in a nonstick pot, add chopped onions and saute well till golden brown in color. Add tomatoes, green chilies,salt and turmeric powder and saute well.
Cook till tomatoes have become soft and mushy. Add cauliflower florets and mix with masala. Add about 1/2-1 cup water and cook the cauliflower. Add some salt.
When the Cauliflower is cooked and there’s little water remaining, add the egg and stir well till cooked. Garnish with Coriander leaves and serve with roti or as a side dish.
